CORN & RED PEPPER SOUP
as prepared by Los Amigos at the Cooking Jersey Fresh event

6 oz. Medium Onion (sliced)
10 oz. Corn
1 cup Chicken Broth
3 oz. Red Pepper
½ Tsp. Roasted Garlic
½ Cup Cream
Salt and Pepper to taste

PROCEDURE:
Sauté onions until caramelized
Work in the Roasted Garlic
Add Corn, Chicken Stock and Peppers
Bring to a boil and cook for 5 minutes
Add the cream, bring back to a boil, then simmer for 5 minutes
Cool down and Puree
Add salt and pepper to taste

MARJORAM PESTO
also from Los Amigos

1 cup fresh marjoram
1 cup cilantro
1 cup parsley (loosely packed & chopped)
2 cloves of Garlic
½ cup Oil
2 tsp cojita cheese
1 TBSP lime juice
Salt and Pepper to taste

PROCEDURE:
Puree marjoran, cilantro and parsley
Slowly add the oil and finish with cheese, lime and salt and pepper
