Recipes for June 23, 2007:


CHERRY SALSA

2 1/4 cups fresh pitted cherries, any variety
1 tablespoon honey
4 tablespoons finely chopped red onion (1/2 small)
2 tablespoons fresh lime juice
1/4 cup chopped fresh cilantro
Salt & Pepper to taste

Pit and coarsely chop cherries, then stir together with honey in a small bowl. Stir in onion, lime juice, cilantro, and seasonings and let stand at room temperature 30 minutes for flavors to develop. Best the day it is made. Will keep, covered and chilled for 1 day.


BLUEBERRY-PINEAPPLE SMOOTHIE

1 cup Fresh or frozen blueberries
1 cup Plain yogurt 1 cup
1 cup Pineapple juice 1 cup
2 tablespoons Honey

In a blender container, combine blueberries, yogurt, pineapple juice, honey and 2 cups ice. Process until smooth.

Makes 4 cups (2 to 4 portions)
